A hearty soup with many great flavors; one of my husband’s favorites.

Beef Barley Soup

Prep Time: 15 minutes

Cook Time: 8 hours, 45 minutes

If you'd like to use fresh veggies, add them with the rest of the ingredients in the beginning. Don't let the small amount of barley fool you; it will be enough!

Ingredients

  • 2 pounds beef stew meat (cut into cubes)
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp basil leaves
  • 2 medium sized bay leaves
  • 1/2 tsp black pepper
  • 1/2 cup red wine
  • 4 cups water
  • 1/2 cup barley
  • 2 cups frozen carrots
  • 2 cups frozen corn
  • 2 cups frozen green beans

Instructions

Combine meat, broth, onion, garlic, basil, bay leaves, red wine, pepper, and water. Cover and cook on low 8-10 hours or high 4-5 hours.

Add frozen veggies and barley, stir to combine. Cover and cook on high 45-55 minutes, until barley is cooked.
