A classic improved by the crockpot! I used to love the flavors of stroganoff, but hated the toughness of the meat when cooked on the stove. The crockpot fixes that creating tender juicy meat.
Use cornstarch to thicken sauce if necessary. If you prefer, you can use low sodium soups, Neufchatel cheese, and low fat sour cream, however then the sauce will be very thin and thickening will be necessary.
Combine steak, mushrooms, onion, broth, garlic, and soups. Cover and cook on low 8 hours or high 4 hours. Stir in sour cream and cream cheese, cook on high an additional 15-20 minutes. Meanwhile cook noodles as directed on package. Serve stroganoff over noodles.
