This beef stew recipe doesn’t use beef broth therefore reducing the sodium.
You could substitute beef broth for the red wine, but in my household we have to watch our sodium intake.
Ingredients
- 2 1/2 - 3 pounds beef stew meat
- 2 1/2 cups red wine
- 2 1/2 cups water
- 1 large onion, chopped
- 1 8 oz can mushrooms, drained
- 1 28 oz can diced tomatoes, with juice
- 1 cup carrots
- 1 cup celery
- 5-6 medium potatoes, chopped
- 1 tbsp minced onion
- 1 tsp basil leaves
- 3 cloves garlic, minced
- 1 tsp ground mustard
- 1/2 tsp black pepper
- 1/2 tsp ground coriander
- 2 medium bay leaves
Instructions
Combine all ingredients in crockpot. Cover and cook on low 8-10 hours or high 4-5 hours, until potatoes and veggies are tender.
