Some people laugh at me when I tell them I make my lasagna in the crockpot – until they try it! Although it requires a little more preparation, it’s well worth it. Another one of our family favorites!!
I often add garlic powder and parsley flakes to the cheese mixture for some extra flavor. Since we love garlic so much, I find myself adding some to the meat mixture as well.

In skillet, cook sausage and onion over medium heat until sausage is no longer pink. Drain. Add sauce and seasonings, mix well, reduce heat to low.
In a bowl, combine ricotta cheese, parmesan cheese, and most of the mozzarella cheese (reserve about 1/4 cup).
Spoon some meat mixture into crockpot. Place a layer of uncooked noodles in crockpot, breaking to fit. Spoon cheese mixture onto noodles, then meat mixture, then noodles. Continue until cheese mixture is gone, top layer should be noodles and meat mixture. Sprinkle with remaining mozzarella cheese. Cover and cook on low 8 hours or high 4 hours.
