My husband loved this dish so much he ate it for lunch for the next three days!
Any firm noodle will do. For this recipe I prefer penne or mostaccioli.
Place chicken in crockpot. Pour diced tomatoes (and juice) over chicken. Spread mushrooms evenly over all. In a small bowl, combine thyme, oregano, parsley flakes, basil, garlic, minced onion, white wine, and tomato sauce; pour over chicken and mushrooms. Cover and cook on low 8 hours or high 4 hours.
Cook noodles as directed on package. Add cheese to crockpot, cover and cook on high until melted (about 10 minutes). Serve chicken with noodles and sauce.
