Served with noodles, this crockpot dish is a very tasty satisfying meal!

Italian Roast with Veggies

If you don't have Italian seasoning mix, add in garlic powder, oregano, a little thyme, black pepper, and parsley flakes.

Ingredients

  • 3 pounds boneless beef chuck roast
  • 1 28 oz can diced tomatoes, undrained
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 cup carrots, chopped
  • 2 zucchini, sliced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning mix
  • 1 small bay leaf
  • 1 cup shredded parmesan cheese
  • noodles

Instructions

Place roast in crockpot. In a medium bowl, combine tomatoes, green pepper, onion, carrots, garlic, and italian seasoning. Pour over roast. Add bay leaf to crockpot, cover and cook on low 8 hours or high 4 hours.

Serve over noodles with parmesan cheese sprinkled on top.
