A wonderful comforting cold weather meal; one of my personal favorites.

Meatball Cassoulet

Cook Time: 8 hours

I've altered this recipe time to time. I love celery in my soups, so I add 2 cups celery chopped. Often I'll only add one can beans, or substitute 3 medium potatoes for the beans. I like to use homemade meatballs as well. Sometimes for an extra kick I'll add a touch of hot sauce and a dash of cayenne pepper. Garlic too!

Ingredients

  • 2 cans navy beans, rinsed and drained
  • 1 38 oz bag frozen meatballs
  • 1 46 oz bottle eight vegetable juice
  • 1 package pre-cooked kielbasa, cut into chunks
  • 1 onion, chopped
  • 1 cup carrots, chopped
  • 1 28 oz can diced tomatoes, with juice
  • 3 tbsp Worcestershire sauce
  • 2 tsp basil
  • 1 tsp oregano
  • 2 tsp paprika

Instructions

Combine all ingredients into crockpot, mix well. Cover and cook on low 8 hours.
