With this particular recipe, I use the chicken in many different ways.  It can be shredded and used in the Chicken Tortilla Soup, or shredded and served in a soft tortilla with sour cream and cheese.  You can serve as a chicken breast with rice and beans. How about quesadillas?  Cut the chicken into chunks and saute some peppers, onions, and mushrooms.  Place a tortilla in a frying pan, put chicken and veggies on it, sprinkle some cheddar cheese on top, and place another tortilla on top.  Cook over medium heat for 6-8 minutes, flip and cook for another 6-8 minutes.  Serve with salsa and sour cream.  So many possibilities!

A super versatile chicken meal!

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 1/2 cups salsa
  • 1 tsp ground cumin
  • 3 tbsp lime juice

Instructions

Place chicken in crockpot. Pour salsa over chicken. Cover and cook on low 7-8 hours or high 3 1/2 - 4 hours, until chicken is tender and no longer pink.

Mix together lime juice and cumin, pour over chicken and salsa. Cover and cook on high 15-20 minutes. Enjoy!
