A great way to reduce costs; use flank or round steak to still get that steak flavor without the price of a more expensive cut of meat.

Steak Fajitas

Cook Time: 8 hours, 25 minutes

If desired, make Deluxe Fajitas!! After 8 hours of cooking, add the bell peppers along with 2 cups fresh sliced mushrooms and 1/2 to 1 pound cooked, devienned, tail off thawed shrimp. You might also want to add a little taco sauce or salsa to add to the liquid in the slow cooker. After adding extra ingredients, cover and cook on high 30-40 minutes.

Ingredients

  • 2 pounds beef round steak, cut into strips
  • 1 14.5 oz can diced tomatoes, undrained
  • 2 cloves garlic, minced
  • 1 4 oz can sliced jalapeno peppers, drained
  • 1 tbsp cilantro
  • 2 tsp chili powder
  • 2 medium green and/or red bell peppers, julienned
  • soft flour tortillas
  • 2 cups shredded cheddar cheese
  • sour cream, salsa, and guacamole if desired

Instructions

Place steak in slow cooker. In bowl, combine tomatoes, garlic, jalapenos, cilantro, chili powder, and cumin, pour over beef. Cover and cook on low 8 hours or high 4 hours. Stir in peppers, cover and cook on high 20-25 minutes.

Serve in tortillas with cheese, sour cream, salsa, and guacamole.
