Beef Pepperocini Sandwiches

These sandwiches are easily one of our favorites and a usual meal in our household.  My husband will often use giardeneria in place of pepperoncinis.  So tasty and so easy!!

Beef Pepperoncini Sandwiches

Yield: 6-8

I prefer my pepperocinis to be sliced and cold, that's why I add them after melting the cheese. My husband prefers to add his pepperocinis with the cheese so it all melts together. Both work very well!! This is a great game day meal, and makes for excellent leftovers!

Ingredients

  • 1 2-3 pound beef chuck roast (boneless)
  • 1 tsp garlic powder or 2 cloves garlic, minced
  • 3 tbsp pepperoncini juice
  • 1/2 cup water
  • Pepperoncinis
  • Swiss or Provolone cheese
  • French bread or kaiser rolls

Instructions

Place roast in crockpot. Add garlic, juice, and water, cover and cook on low 8-10 hours or high 4-5 hours. Remove roast from crockpot, shred meat. Meanwhile, toast french bread (cut into sandwich size portions) or kaiser rolls in broiler for 2-3 minutes. Spoon shredded meat onto toasted bread, top with one slice of cheese, broil until cheese is melted. Add pepperoncinis to sandwich (sliced or whole) and enjoy!
