Breakfast Casserole

Consider breakfast for dinner too! That's a practice I often forget about.

Ingredients

  • 10 slices bacon, cooked and crumbled
  • 1 cup ham, cooked and cubed
  • 10 breakfast sausage links, cooked and sliced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can condensed cheddar cheese soup
  • 1 16 oz package frozen diced hash brown potatoes
  • 1/2 cup egg substitute
  • 1/2 tsp black pepper
  • 1/2 seasoned salt
  • 1 cup shredded cheddar cheese

Instructions

Cook meat if not done so already. Layer meat in bottom of slow cooker. In a bowl, combine soup, onion, red pepper, pepper, salt, and egg substitute. Pour over meat. Layer frozen potatoes on top. Cover and cook on low 8 hours.

Sprinkle cheddar cheese in crockpot, cover and cook on high an additional 5-10 minutes, until cheese is melted.
