My family loves when I make mashed potatoes, because that often means one thing:  Shepherd’s Pie the next day with the leftover potatoes.  Of course, I always want the prep time to be as quick as possible so I came up with this!

Crockpot Shepherd’s Pie

Prep Time: 15 minutes

Cook Time: 8 hours

8 hours, 15 minutes

Yield: 6-8

You can use fresh or frozen vegetables. You might want to use a slotted spoon to serve to leave some of the liquid in the crockpot.

Ingredients

  • 2 lbs ground beef, browned and drained
  • 2 cups sliced carrots
  • 1 onion, chopped
  • 2 cups corn
  • 2 cups green beans
  • 1 cup beef broth
  • 1 cup water
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 2 tbsp Worcestershire sauce
  • 4 cups mashed potatoes, prepared

Instructions

Place browned ground beef in crockpot. Mix in carrots, onion, corn, green beans, broth, water, garlic powder, pepper, and Worcestershire sauce. Spoon mashed potatoes on top of beef mixture.

Cover and cook on low 6-8 hours or high 3-4 hours.
