I must admit, there are days when I actually feel like cooking.  I feel like spending hours in my kitchen, preparing a wonderful meal for my family.  Granted, these days are usually few and far between but when that feeling hits me I make something like this!

This recipe won’t take hours, but it does take a bit to prepare.  You could always do all the preparation (up to the baking) ahead of time and then just throw them in the oven before dinnertime.

 

NOTE:  This makes a huge batch!  It will fill a 9×13 pan, so be ready for some tasty leftovers.

 

Prep Time: 40 minutes

Cook Time: 35 minutes

I would suggest stuffing the shells very full, as otherwise you'll end up with more than a 9x13 pan of shells. You could try to sneak in the entire package of spinach, but I can usually only get away with half of it with my family!

Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 green onions, diced
  • 4-6 cloves of garlic, minced
  • 1 cup sliced mushrooms
  • 1/2 package frozen spinach
  • 1 container low fat ricotta cheese
  • 1 cup shredded mozzarella
  • 1/2 cup shredded or grated parmesan cheese
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 box manicotti or large shells
  • 1 24 oz jar spaghetti sauce

Instructions

Brown sausage in medium skillet, drain. Add onions, green onions, and garlic; saute until onions are softened. Add mushrooms and spinach, saute until mushrooms are just soft.

Meanwhile, prepare shells as directed on package. In large bowl mix together ricotta cheese, mozzarella cheese, parmesan cheese, Italian seasoning, and garlic powder. Add sausage mixture and mix well.

Preheat oven to 350 degrees. Rinse shells in cold water. Stuff shells with spoonfuls of mixture, place in greased glass 9x13 pan. Pour jar of sauce evenly over shells. Bake for 30-35 minutes, until heated through.
