As a child, I was actually not a big fan of cupcakes. They were alright, but there were other desserts I would pick over cupcakes. As an adult, I have a much different viewpoint.
Perhaps that was because of what type of cupcake I was offered as a kid; usually the mixes with flavors like vanilla, chocolate, or if you were really lucky – marble. Slop that pre-made frosting on the top and I passed almost every time.
Recently, I’ve opened up to the world of cupcakes again. I particularly like my mini cupcake pan and just a couple days ago made Carrot Cake mini cupcakes with cream cheese frosting. Perfect serving size, so cute, and so yummy! No more am I forced to stay within the cake mix mold; I have broken away and made these tiny desserts with bursts of different flavors!
So of course while browsing around Pinterest I find numerous pictures of cupcakes. This one in particular caught my eye:
Right? I know – right now you’d like to reach through your screen, grab one, and start eating! I showed them to my oldest daughter and she immediately looked in our cupboards to make sure we had peppermint extract and then took a quick trip to the grocery store for the devils food cake mix and Andes Mints.
