The kiddos and I are coloring Easter eggs today, which means in a few days I’ll be peeling pink, blue, and purple eggs and making these.
I like to use more ground mustard rather than less as it gives the eggs more flavor and zing. Also, use your favorite deli style mustard - I often use a horseradish mustard for even more flavor!
Slice eggs in half lengthwise. Remove yolks, place in a bowl and mash with fork.
Stir in Miracle Whip, mustard, ground mustard, parsley flakes, and garlic powder.
Spoon yolk mixture into egg halves, sprinkle with paprika.
Refrigerate until ready to serve.
