We love tilapia in our house. In fact, I buy it in 4 lb bags with the fillets individually wrapped and frozen so that I know I always have it on hand. I offered to make Parmesan Crusted Tilapia one night and my husband replied with “How about Blackened Tilapia?”
Believe it or not, I had never actually made a blackened fish recipe before. After the first bite, however, my husband immediately told me that this had to go into my arsenal of dinner recipes and our normal dinner rotation. After my first bite, I quickly agreed.
These pair well with a fresh orange or mango salsa.

Mix together black pepper, garlic powder, onion powder, cayenne pepper, cumin, and chili powder. Sprinkle on one side of the fillets.
Melt the butter in a medium sized skillet over medium high heat. Place the seasoned side of fish down in skillet. Cook for 3-5 minutes. Sprinkle remaining seasoning mix on fish in pan.
Flip fillets and cook an additional 3-5 minutes, until fish is opaque and flakes with fork.
