Each year during late summer, I’m scrambling to figure out what to do with all the zucchini we harvest from our garden. There’s the normal breads and muffins, grilled zucchini, adding it to spaghetti sauce and chili, and just eating it raw.
Enter zucchini pizza boats. The kids have already started asking about this recipe and whether or not we’ll make these again this summer. I love it because they’re eating zucchini. They love it because it tastes like pizza.
I've always grilled this recipe since we make it in the middle of summer, but it definitely could be baked as well.
Get creative with your 'pizza' toppings - pepperonis offer a nice flavor contrast to the zucchini, but you could certainly add mushrooms, other vegetables - whatever you like on your pizza!

Cut ends off zucchini and slice lengthwise. Using a spoon, scrape out insides and set aside. Saute mini pepperonis on medium heat 4-5 minutes. Add zucchini insides, garlic powder, and black pepper. Mix well and cook 5 minutes or so. Add in pizza sauce and heat just until warm.
Mix mozzarella cheese and parmesan cheese in bowl. Lightly spray outside (bottom) of zucchinis with cooking spray. Spoon heated mixture into 'boats' and sprinkle with cheese. Grill on medium low heat for 10-15 minutes, until cheese is browned.
