During the summertime, I get bored with the usual coleslaw and potato salad. I want a different side to go with burgers, chicken breasts, hot dogs – whatever ends up on the grill that night.
Enter the Marinated Veggie Salad. My mother in law introduced me to a version of this with different veggies and a slightly different marinade.
Though I've made this a few times with various vegetables and found this combination to be our family preference, try it with your favorite veggies!
Slice zucchini and summer squash into bite size pieces. In a large bowl, combine all the vegetables. In a smaller bowl, mix together vinegar, sugar, water and olive oil. Pour over vegetables and toss to coat. Cover and refrigerate 2 hours or until chilled.
