We love oatmeal cookies. We also love almost anything with apples and cinnamon in them. So when we had more apples from the apple orchard than I knew what to do with, I thought making apple cinnamon oatmeal cookies sounded like a great idea. My husband apparently thought so.
I came down from putting our daughter to bed and he told me the cookies were awesome and then (almost sheepishly) admitted he had eight. Eight. In about 5 minutes.
So yes, I’d say these were a success! This year rather than bake up all my apples from the orchard I’m trying something new; I peeled, cored, cut, and chopped apples, splashed them with some lemon juice, and threw them in the freezer. If freezing them works, it’s going to be wonderful to save all that time later.
I would recommend making a double batch. I made a double batch and it was gone in about 3 days!

Instructions
Preheat oven to 350 degrees.
Combine butter, sugar, and brown sugar. Beat in egg and vanilla.
Add flour, baking soda, and cinnamon and mix well.
Stir in oats and apples.
Drop onto greased cookie sheets and bake for 10-12 minutes.
