Lately I have found myself staring at my kitchen counter, wondering what on earth to do with all the apples we got from the apple orchard! I wanted something easy that had a caramel apple flavor. Voila!
I would suggest using a thicker caramel sauce such as Mrs. Richardson's.
Prepare cake mix as directed on package. Fill muffin cups 1/3 full and bake for 9-10 minutes. Remove from oven and press 3-5 apple chunks into center of cupcake. Drizzle caramel topping over cupcake. Bake for remaining 10-12 minutes or until done.
