It was one of those days the other day. I really wanted to make a crockpot meal because I knew there would be no time after school and work to throw something together for dinner. I knew I would be so happy if all I had to do was make some noodles or rice and spoon the meal on top. But nothing that is in my normal dinner rotation sounded appealing.
I stood for minutes peering into my fridge, staring at what I could possibly put into my crockpot. Although they are family favorites, I just didn’t feel like Pepper Steak or Beef Stroganoff. So I went a different route, and the whole family was so glad I did!
If you want it to have some spice, I recommend sriracha. If you would prefer a milder flavor, simply leave out the hot sauce.
Put beef strips into crockpot. In a bowl combine ginger, garlic, soy sauce, water, brown sugar, scallions, carrots, sriracha and sesame seeds.
Pour over beef.
Cover and cook on low for 8 hours or high for 4 hours.
Serve with noodles or rice.
