Balsamic Tilapia with Aspargus and Red Peppers

I am so ready for spring.  Anyone who lives in the Midwest will agree with me.  This has been a long, cold winter with lots of snow.  I need sunshine and the food that spring and summer brings!


In light of this we had a day a week or so ago that was warmer.  Not quite warm enough to break out the grill but warm enough that I wanted something with spring flavors.  Here’s what I came up with!


Balsamic Tilapia with Aspargus and Red Peppers

Prep Time: 15 minutes

Cook Time: 20 minutes

35 minutes

Yield: 4

If feta cheese isn't your thing, try bleu cheese or sharp cheddar.


  • 3-4 tilapia filets
  • 1 red pepper, chopped
  • 1/2 pound asparagus
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 3 tbsp balsamic vinegar
  • 1/2 cup feta cheese


Preheat oven to 375 degrees. Saute asparagus in olive oil over medium heat for 4-5 minutes, add red pepper and saute an additional 4-5 minutes, until tender. Remove from heat, add balsamic vinegar and mix. Set aside.

Spray 9x13 glass baking dish with non-stick cooking spray. Place tilapia filets in dish, sprinkle black pepper and garlic powder over fish. Pour balsamic veggie mixture over filets, sprinkle feta cheese over all. Bake for 20 minutes, until fish flakes with fork. Serve immediately.
