Each year during late summer, I'm scrambling to figure out what to do with all the zucchini we harvest from our garden. There's the normal breads and muffins, grilled zucchini, adding it to spaghetti sauce and chili, and just eating it raw. Enter zucchini pizza boats. The kids have already started asking about this recipe and whether or not we'll make these again this summer. I love it because they're eating zucchini. They love it because it tastes like pizza.
