A wonderfully tasty soup bursting with tomato flavors.

Ingredients:
| 1 | medium chopped | onion |
| 4 | chopped stalks of | celery |
| 12 | oz. | imitation crabmeat |
| 4 | cloves minced | garlic |
| 1 | undrained | 28 oz can diced tomatoes |
| 4 | cups | eight vegetable juice |
| 1 | 12 oz can | evaporated milk |
| 1 | 15 oz can | tomato sauce |
| 2 | medium | bay leaves |
| 2 | tbsp | basil |
| ½ | tsp | black pepper |

Instructions:
Saute onion, celery, garlic and crabmeat in 1T of olive oil over medium heat until the onion and celery are tender. Combine all ingredients in large saucepan, simmer on low heat for 25-30 minutes. Remove bay leaves before serving.

Notes: Of course this could be made in the crockpot! Combine all ingredients EXCEPT crab and evaporated milk, cover and cook on low 7-8 hours. Add crab and milk, cover and cook on high 20 minutes. Enjoy!
