Ingredients:
| 2 | pounds boneless skinless | chicken breasts |
| ¾ | cup | salsa |
| ⅓ | cup | peanut butter |
| 1 | tbsp | lime juice |
| ½ | tbsp | thai paste |
| 1 | tsp | ginger |
| 1 | tbsp | soy sauce |
| ¼ | cup chopped | peanuts |
| 4 | servings hot cooked | rice |

Instructions:
Spray crockpot with cooking spray. Place chicken in slow cooker. In a bowl, mix salsa, peanut butter, lime juice, thai paste, ginger, and soy sauce; pour over chicken. Cover and cook on low 8 hours.
