Although you could use bottled sweet and sour sauce, I decided to make the sauce from scratch, and it was still easy!

Ingredients:
| 1 | medium chopped | onion |
| 1 | medium chopped | green pepper |
| 1 | medium chopped | red pepper |
| 4 | stalks chopped | celery |
| 2 | pounds boneless skinless | chicken breasts |
| 1 | 20 ounce can | pineapple chunks |
| 2 | tbsp | quick cooking tapioca |
| 2 | tbsp | brown sugar |
| 2 | tbsp | soy sauce |
| 1 | tsp | ground ginger |
| 2 | cloves minced | garlic |
| 1 | tbsp | balsamic vinegar |
| ½ | cup | water |
| 2 | tsp | lemon juice |

Instructions:
Spray crock pot with cooking spray. Cut chicken into bite sized cubes. Place vegetables in slow cooker, place cubed chicken on top. Pour pineapple chunks, with juice, over chicken.
