Calzone-Empanada-Pot Stickers-Dim Sum-Piroshki-Turnovers


Whatever you call them, they're tasty.  A baked or fried pastry type dumpling with filling transforms into a fun family meal.

Ingredients
1 package refrigerated pizza dough
1 egg
1/4 cup water
Filling - see below

**Any meat that goes into the calzone should be cooked first.  Likewise, if adding onions, you may want to saute them first.  Anything that is pre-cooked is fine - it will simply warm up inside the calzone and create a tasty meal!

Preheat oven to 375 degrees.  Flour countertop, roll out refrigerated dough and using a floured rolling pin, roll the dough a little thinner.  The thickness of the dough should be your preference; if you like your calzone doughier, then stay with the thicker dough.  Cut dough into circles; smaller circles for appetizers and little appetites, larger circles for main meals.  I used cereal bowls, dessert plates, and mixing bowls as references, then used a pizza cutter to cut out the size circle I wanted.
Place a small amount of filling on the circle.  Fold one side over to the other creating a half circle.  Moisten your fingers with water and press to seal.  Using fork tines, press to close.  Vent the calzone slightly and place on greased cookie sheet.  In a small bowl, whisk together the egg and water, lightly brush egg mixture over the calzone.  Bake for 12-16 minutes, until browned.  (You can fry if you like, but I prefer the heathier baking method.)

Pizza filling using canned or jarred pizza sauce, favorite pizza toppings, and cheese
Mexican filling using 1 pound meat (shredded chicken, ground beef, steak strips), salsa or taco sauce, refried beans, onions, cheese
Dessert filling using a can of pie filling
Appetizer filling using different cheeses
Lunch filling using cubed ham and cheese

Try spinach, feta cheese, and black olives.  How about shredded chicken, artichoke hearts, can of diced tomatoes, and black olives?  We've done ground turkey seasoned with basil, thyme, minced onion, and parsley, and added chopped frozen spinach, feta cheese, and pepperoni.  Spruce it up with a dipping sauce like alfredo or marinara.  The important thing is to get creative and not be afraid to try whatever sounds good!
