Recipe: Country Chicken

A wholesome down-home country meal served over biscuits. My kids loved it!

Time to Cook: 8½ hours
Number of servings: 6
Ingredients:
4boneless skinlesschicken breasts
1medium choppedonion
2cups choppedcelery
8ounces slicedmushrooms
1cupwhite wine
4cloves mincedgarlic
12ouncesevaporated milk
16oz package mixed frozenvegetables
Instructions:
Spray crockpot with non-stick cooking spray. Place chicken in slow cooker. Add onion, celery, mushrooms, wine, and garlic. Cover and cook on low for 8 hours or high for 4 hours. Remove chicken and shred, place back into slow cooker. Add milk and veggies. Add a mixture of cornstarch and water if you desire a thicker sauce. Cover and cook on high for 20-30 minutes. Serve over biscuits.
Notes: The mixed frozen veggies I like to use are green beans, corn, and carrots, but anything would work!
