Sample Menu and Grocery List
Many of you have requested that I put together a menu with grocery list (ingredients are listed by recipe or by food category). These meals can be done in almost any order, as long as some of the recipes are made before others to take advantage of leftovers (see below for further explanation). It is likely that this menu will provide large amounts of leftovers for families of four or less; most everything freezes well for up to 4 months. Enjoy!

Garlic Pork Roast with mashed potatoes and your choice of vegetable. Shred remaining pork and freeze or refrigerate for BBQ Pork Sandwiches later in the week.
Spaghetti Sauce with your choice of pasta. This will make a ton of sauce! Freeze a bunch for later, but refrigerate some sauce for Open Face Pizza Sandwiches later in the week.
Pepper Steak served with rice. Makes a great lunch the next day!
Salsa Chicken with corn, black beans and rice. Prepare the black beans and rice as directed on package. Shred remaining chicken and add leftover corn and black beans with rice for Chicken Burritos later in the week.
BBQ Pork Sandwiches - Combine leftover shredded pork with your favorite flavor of BBQ sauce, warm on stove over medium heat. Spoon into hamburger or sandwich buns to serve. If desired, serve with baked fries: Thinly slice 7-8 potatoes, toss in a bowl with olive oil to coat and pepper and seasoned salt to taste. Bake at 375 degrees for 8-10 minutes, turn, bake an additional 8-10 minutes, to desired crispness.
Open Face Pizza Sandwiches - Prepare garlic bread as directed on package. Warm leftover spaghetti sauce in saucepan over medium heat, stirring frequently. Slice toasted bread, top with spoonful of sauce and sprinkle with mozzarella cheese.
Chicken burritos - Warm leftover shredded chicken mixture in a skillet over medium heat. If desired, add 1-2 tsp of mexican seasoning mix. Spoon into tortillas, top with shredded cheddar cheese, and serve with sour cream.
