Sample Menu and Grocery List #2
The response to the first menu with grocery lists was overwhelming, encouraging me to do another one.  Here it is!  Again, these meals can be done in almost any order, as long as some are made prior to others to take advantage of leftovers.  This menu will probably provide large amounts of leftovers for families of four or less; you can freeze most anything for up to six months.  Enjoy!

Sour Cream Chicken - with baked potatoes and your choice of vegetables.  De-bone remaining chicken and refrigerate for the Chicken Casserole later in the week.

ausage and Spanish Rice - a wonderful hearty one dish meal.

Spiced Pork Roast - serve with mashed potatoes and your choice of vegetables.  Shred remaining pork and refrigerate for Ginger Pork Wraps later in the week.

Pasta Bake - you can use either the jarred marinara sauce or any spaghetti sauce you may have in the freezer.

Chicken Casserole - Combine chicken leftovers with cooked noodles, a can of cream based soup, and a bag of frozen vegetables.  Can be prepared in the crockpot or baked in a 350 degree oven for 25 minutes.  See my article on casseroles for more ideas.

Swedish Meatballs - served with noodles.

Ginger Pork Wraps - In a large skillet, combine leftover pork and 1/3 to 1/2 cup of hoisin sauce.  Add 1 tsp ginger.  In a small bowl, combine one small finely chopped red onion, 1/2 head of finely chopped cabbage, 1 cup shredded carrot, and 1 tbsp balsamic vinegar.  Spoon pork and vegetable mix into tortilla and wrap.
